The Traditional Taste of Trabzon Cuisine; Trabzon Yellow Cookie
Desserts, including bakery products, have a special place in Turkish cuisine. In this study, which is a qualitative research, it is aimed to introduce the yellow cookie, which is unique to Trabzon, to the literature in order to protect and ensure the continuity of local foods. In the study, face-to-face interviews were conducted with 8 male participants aged between 48-70 years living in Trabzon, a semi-structured questionnaire was used, and the data obtained were recorded and described. Yellow cookies have existed for over 100 years, are produced using wheat flour, sugar, sunflower, coloring (natural or artificial) and raising agents, contrary to the common belief, they are not colored with corn flour, and are a preferred food alongside tea consumption. It has been determined that it is also called "gorobi, gorobiya, gorabiye".
